What does Kate's eat these days

As requested

 Her usual breakfast
1. Avocado, mixture of fruits (e.g apple and blueberry/peach- family) and milk or;
2. Oatmeal, milk with fruits.
(e.g apricot with peach/ strawberry, blue berry and kiwi/ apple and blue berry/ mango, kiwi and strawberry)
3. fruits puree

Her usual lunch meal
1. Rice, winter melon/white melon/marrow green/zucchini,edamame/tofu/green beans,carrot, fish and/or meat with stock*
2. Rice, pumpkin/sweet potato/tomato, fish and/or meat and edamame/tofu with stock*
3. Rice, green bean/any leafy vegetables, egg yolk, fish and/or meat, carrot with stock*



* Stock
On a weekly basis, we will make the stock and the ingredients are 2 corns with a bag of soft bones (Pork) and 1.5 litre of water

I would freeze it into 6 containers and use it for 6 days

Pumpkin with Pork

Kate has pumpkin at least once a week and the rest of it usually become one of our dishes for dinner.
Our usual way of cooking is to fry some garlic, add pumpkin slices then water. Stew it for 10 mins and tada.. It's done.

However... KT hates it! I could tell by the few slices he ate. Sometimes, he doesnt even touch it!

So, today, I went online and tested this recipe

Prep Time: 15 minutes

Cook Time: 20 minutes

Ingredients:

  • 1 slice thick bacon 
  • 2 cups fresh, peeled and sliced (1/4-inch pieces) pumpkin
  • 1 medium yellow onion, peeled and sliced
  • 1/2 cup fresh chicken stock or canned chicken broth
  • 1 pound pork butt or shoulder, cut into 1/8-inch strips
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste

Preparation:

In a frying pan or wok, saute the bacon until it is transparent. Add the pumpkin slices and onions. Stir around in the rendered bacon fat. Add the broth. Cover and cook over medium heat until the pumpkin is tender, about 15 minutes. Remove the vegetables from the pan.

Reheat the pan and saute the pork until done, about 5 minutes. Add the vegetables to the pan and toss with the cumin, salt, and pepper. Cover for just a moment so that the flavors may develop.

Yield: 4 servings


Verdict: If you love bacon You should at least try once!
KT had two bowls of rice with this dish! Everyone of us loves it.
